Japonica Sushi Rolls with Cucumber and Cooked Seafood
Seasoned rice should hold a roll together without becoming a heavy paste. This approachable sushi version uses cooked seafood, cucumber and avocado, letting you focus on rice seasoning and shaping. The same preparation can support a small hospitality menu trial.

Choosing Rice for This Dish
Japonica is selected for its short grains and cohesive cooked texture. Aromatic long-grain rice is not treated as an equivalent sushi rice.
Ingredients
- 200 g Japonica and water per pack
- 2 nori sheets
- 2 tbsp rice vinegar, 2 tsp sugar, ½ tsp salt
- 100 g cooked shrimp or cooked crab meat
- ½ cucumber and ½ avocado
- Soy sauce and ginger for serving
Method
Rinse Japonica and cook following the pack. Rest covered for 10 minutes. Dissolve sugar and salt in the rice vinegar.
Spread warm rice in a shallow bowl. Fold in the vinegar gently and let it cool enough to handle; do not mash the grains.
Place nori on a bamboo mat. With damp hands, spread a thin rice layer, leaving a 2 cm border; add cooked seafood, cucumber and avocado.
Roll firmly, seal the border with a little water and cut with a damp sharp knife. Serve promptly with dipping sauce.
Chef’s Notes
Use a thin filling line so the roll closes neatly. Keep the knife clean between cuts; trapped filling and sticky rice can tear the nori.
