Whole-Grain Rice Plate with Roasted Pumpkin and Nuts

Roasted pumpkin brings sweetness, cabbage adds crunch and nuts provide contrast to a whole-grain rice base. Serve the components separately so diners can combine each mouthful. This plate is intended as a colourful menu idea, without making nutritional or weight-loss claims.

Choosing Rice for This Dish

Brown Rice is the direct starting point. Huyết Rồng and Healthy Rice Mix are variations to test because their cooking times can differ.

Ingredients

  • 180 g brown rice or a tested whole-grain mix
  • Water according to the grain pack
  • 300 g peeled pumpkin cubes
  • 100 g red cabbage and ½ cucumber
  • 25 g unsalted cashews
  • 1 tbsp olive oil and 1 tbsp lemon juice
  • 2 tbsp plain yogurt, optional

Method

  1. Cook the whole-grain rice with its specified water and timing. Keep the finished rice covered while preparing the toppings.

  2. Heat the oven to 200°C. Toss pumpkin with oil and roast for 20–25 minutes until tender, turning once.

  3. Shred cabbage, slice cucumber and toast cashews briefly. Mix lemon with yogurt, or use lemon alone for a dairy-free finish.

  4. Divide warm rice between plates. Arrange pumpkin, fresh vegetables and nuts beside it, serving the dressing separately.

Chef’s Notes

Roast the pumpkin while the rice cooks. Keep raw cabbage dry after washing so it does not dilute the dressing or wet the rice.
